Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.The barley variety Publican was grown in the 43ac field and harvested by John and Sandy on the 28th & 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010.The twenty-seven first-fill barrels, which had previously been used to mature bourbon from Clermont Springs distillery in Kentucky, were matured on the upper level of our dunnage warehouse. They were filled in December 2011 and bottled in 2024.
These sixth-generation farmers reckon that they are only the third family to have farmed Daftmill in 1,000 years of existence, but it was only in 2003 that the idea of whisky making began to form in the minds of Francis Cuthbert and his brother Ian. They converted three of their buildings into a distillery in 2003 and were granted their licence two years later, making it the first member of the now burgeoning small-scale distilling movement in Scotland.
